Tools: Food Processor or Hand Blender with container
Ingredients:
- 1 and 3/4 cups of almonds
- 2 cups of dried pineapple (if you have a dehydrator you can do it yourself, otherwise just buy at the store)
- 1-2 cups of pitted dates (depending on how sweet you like it, I used 1 cup)
- 1/3 cup plus 1/4 cup of shredded coconut
- 1 tablespoon of vanilla extract (or alternatively, use one vanilla bean scraped for better flavour)
- 1/2 teaspoon of sea salt
