About Free Vee-gan

Free Vee-gan is about the liberty to eat what you want. It doesn’t matter if you are a vegan, a carnivore, a vegetarian, or a raw food enthusiast. 'Vee' stems from my childhood nickname and also from being vegan myself. Many of the foods/recipes in this blog will be vegan but, they will also be 'free '. This means free from pesticides, chemicals and allergy triggers like soy, wheat, and gluten. Ultimately, 'Free Vee-gan' is about freedom for vegans and it is a place where you can discover and find many nourishing and delicious food options to enjoy. It is about the freedom to consciously chose want to eat! Now how freeing would that be?

Donut Holes

 

Tools: Food Processor or Hand Blender with container

Ingredients:
  • 1 and 3/4 cups of almonds
  • 2 cups of dried pineapple (if you have a dehydrator you can do it yourself, otherwise just buy at the store)
  • 1-2 cups of pitted dates (depending on how sweet you like it, I used 1 cup)
  • 1/3 cup plus 1/4 cup of shredded coconut
  • 1 tablespoon of vanilla extract (or alternatively, use one vanilla bean scraped for better flavour)
  • 1/2 teaspoon of sea salt 
Directions: In food processor, place almonds, salt and vanilla and process into small pieces. Slowly add and incorporate the chopped pineapple and dates, mix well. Place in a bowl and add and mix in 1/3 cup of coconut. Once everything is incorporated, take a heaped teaspoon of the mix and roll into a ball with your hand. If you wish, roll Donut Holes in extra 1/4 cup of coconut.
